Coonridge Corn Casserole

This recipes makes a wonderful Corn Casserole with a Southwestern Twist.

1cupplain yogurt
1boxcorn muffin/bread mix
2large eggs
1can16 oz of cream corn
1can16 oz of regular corn
1jarCoonridge Southwestern Blend Organic Goat Cheese

Preparation

1. Preheat oven to 325 degrees Fahrenheit
2. Lightly beat the eggs
3. Mix by hand the yogurt, corn mix and eggs
4. Drain the regular corn
5. Add both cans of corn and the jar of goat cheese to mixture and mix thoroughly
6. Bake until the middle becomes firm (about 45-60 minutes)
